Ingredients

  • 1 cup cooked chickpeas
  • 12 oz cellentani pasta
  • 2 tbsp olive oil
  • 2 cloves garlic
  • 1 cup reserved pasta water
  • Salt and pepper to taste

Instructions

  • Cook the pasta in salted boiling water until al dente. Reserve 1 cup of pasta water and drain.
  • Blend chickpeas, olive oil, garlic, and a splash of pasta water until smooth.
  • Toss the cooked pasta with the chickpea cream sauce, adding reserved pasta water as needed.
  • Season with salt and pepper, garnish with fresh herbs, and serve warm.

Notes

  • Pasta Water Is Key: Don’t forget to reserve pasta water before draining the pasta. It helps achieve the perfect creamy sauce consistency.
  • Customize the Flavor: Add a pinch of smoked paprika or chili flakes for a subtle heat or zest of lemon for brightness.
  • Storage Tip: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of water or broth to loosen the sauce.
  • Protein Additions: For a heartier meal, top with grilled chicken, shrimp, or crispy tofu.
  • Vegetable Pairings: Roasted broccoli, zucchini, or cherry tomatoes complement the dish beautifully.
  • Blending Tip: If you prefer a super-smooth sauce, use a high-speed blender.
