Ingredients

  • 4 sturgeon fillets about 6 oz each
  • 2 tbsp olive oil
  • 1 tbsp salt
  • 1 tbsp black pepper
  • 1 tbsp garlic powder
  • 1 tbsp paprika
  • 1 cup fresh cilantro
  • 3 tbsp lime juice
  • 2 cloves garlic
  • 1/4 cup olive oil
  • 1 tbsp honey or agave syrup
  • Salt and pepper to taste

Instructions

Prepare the Sturgeon:

  • Pat the fillets dry with a paper towel.
  • Brush both sides with olive oil and season with salt, pepper, garlic powder, and paprika.

Grill the Sturgeon:

  • Preheat the grill to medium-high heat.
  • Place the fillets skin-side down on the grill. Cook for 4-5 minutes.
  • Flip and cook for another 4-5 minutes, or until the fish flakes easily with a fork.

Make the Lime Cilantro Sauce:

  • In a blender, combine cilantro, lime juice, garlic, olive oil, and honey. Blend until smooth.
  • Season with salt and pepper to taste.

Serve:

  • Drizzle the lime cilantro sauce over the grilled sturgeon.
  • Serve with your choice of sides and enjoy!

Notes

  1. Choosing Sturgeon:
    • Look for fresh, high-quality sturgeon fillets with firm flesh and a mild, clean smell. If fresh sturgeon isn’t available, frozen fillets work well—just thaw them completely in the refrigerator before grilling.
  2. Marinating the Sturgeon:
    • For extra flavor, marinate the sturgeon in olive oil, lime juice, and garlic for 30 minutes before grilling. This step is optional but adds depth to the dish.
  3. Grilling Tips:
    • Make sure your grill grates are clean and lightly oiled to prevent sticking.
    • Avoid moving the fish too much while grilling—this helps achieve those beautiful grill marks.
  4. Sauce Variations:
    • If you’re not a fan of cilantro, try substituting it with parsley or basil.
    • Add a pinch of chili flakes or a dash of hot sauce to the lime cilantro sauce for a spicy kick.
  5. Serving Suggestions:
    • This dish pairs beautifully with a side of roasted vegetables, a fresh green salad, or a bowl of steamed rice.
    • For a complete meal, serve with a glass of Sauvignon Blanc or a light beer.
  6. Storing Leftovers:
    • Store leftover grilled sturgeon in an airtight container in the refrigerator for up to 2 days. Reheat gently in the oven or on the stovetop to avoid drying out the fish.
    • The lime cilantro sauce can be stored separately for up to 3 days.
  7. Common Pitfalls to Avoid:
    • Overcooking the sturgeon can make it dry. Keep an eye on the cooking time and use a meat thermometer to ensure the internal temperature reaches 145°F (63°C).
    • Don’t skip patting the fish dry before seasoning—this helps achieve a better sear on the grill.
