    Notes

    Cooking Notes for Dory Recipe

    1. Choosing Fresh Dory:
      • Always opt for fresh dory fillets with a firm texture and a mild, ocean-like smell. Avoid fillets that appear dull or have a strong fishy odor.
    2. Patting Dry:
      • Before seasoning, pat the fillets dry with a paper towel. This ensures a crispy exterior when pan-searing and prevents steaming.
    3. Marinating Tips:
      • For deeper flavor, marinate the fillets for up to 30 minutes in the refrigerator. Use a mix of olive oil, garlic, lemon zest, and your favorite herbs.
    4. Cooking Techniques:
      • Pan-Seared Dory: Use a non-stick skillet and medium-high heat. Cook for 3-4 minutes on each side until golden brown. Avoid overcrowding the pan to ensure even cooking.
      • Baked Dory: Preheat the oven to 200°C (400°F). Place the fillets on a parchment-lined baking sheet and bake for 12-15 minutes.
    5. Avoid Overcooking:
      • Dory cooks quickly, so keep an eye on it. The flesh should turn opaque and flake easily with a fork when done. Overcooking can make the fish dry.
    6. Adding Flavor:
      • Enhance the dish with a squeeze of fresh lemon juice or a sprinkle of chopped parsley before serving. You can also add a pinch of chili flakes for a spicy kick.
    7. Serving Suggestions:
      • Pair the dory with light sides like steamed vegetables, garlic mashed potatoes, or a fresh garden salad. A crisp white wine or iced tea complements the dish perfectly.
    8. Storing Leftovers:
      • Store leftover dory in an airtight container in the refrigerator for up to 2 days. Reheat gently in a skillet or oven to retain moisture.
    9. Using Frozen Dory:
      • If using frozen fillets, thaw them completely in the refrigerator before cooking. Pat them dry to remove excess moisture.
    10. Customization:
      • Feel free to experiment with different seasonings, such as dill, thyme, or smoked paprika, to suit your taste preferences.
