Ingredients

Instructions
 

Prepare the Vegetables:

  • In a large bowl, combine the grated potatoes, grated carrots, and chopped onion. Squeeze out any excess moisture using a clean kitchen towel.

Mix the Batter:

  • Add the eggs (or flax eggs), flour, chopped fresh herbs, salt, pepper, and paprika to the grated vegetables. Gently fold the mixture until all ingredients are just combined, ensuring not to over-mix.

Preheat the Oil:

  • Heat a generous layer of oil in a frying pan over medium-high heat. Test the oil by dropping a small spoonful of batter into the pan; it should sizzle immediately.

Form and Fry the Fritters:

  • Scoop approximately 2–3 tablespoons of the mixture for each fritter and flatten them slightly in the pan. Fry in small batches to avoid overcrowding, cooking for about 3–4 minutes per side until golden brown and crispy.

Drain and Serve:

  • Remove the fritters with a slotted spoon and place them on paper towels to drain excess oil. Serve warm with your favorite dipping sauce or a squeeze of lemon.
