Ingredients

  • 1 cup Monterey Jack cheese shredded
  • 1 cup Cheddar cheese shredded
  • 1 tablespoon butter
  • 1 small onion finely chopped (optional)
  • 1 garlic clove minced (optional)
  • 1 small can diced tomatoes with green chilies
  • 1-2 fresh chili peppers chopped (adjust to taste)
  • 1/2 cup milk adjust for desired consistency
  • 1/2 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional

Instructions

  • In a small saucepan, melt the butter over low heat.
  • If using, add the chopped onion and garlic; sauté until they are soft.
  • Gradually stir in the milk and let it warm through.
  • Slowly add the shredded Monterey Jack and Cheddar cheeses, stirring continuously until the cheese melts completely.
  • Mix in the diced tomatoes, chopped chili peppers, cumin, salt, and pepper.
  • Keep stirring until the queso dip reaches a smooth, consistent texture.
  • Adjust the thickness by adding a bit more milk if necessary.
  • Remove the saucepan from heat and garnish with fresh cilantro before serving.

Notes

  • Low Heat is Key: Use low heat to prevent the cheese from burning. Stir gently and continuously to ensure a smooth consistency.
  • Freshly Shredded Cheese: Freshly shredded cheeses melt more evenly than pre-shredded options. Shredding your own cheese can help achieve a creamier texture.
  • Adjusting Consistency: If the dip thickens too much, gradually add more milk until you reach your preferred texture.
  • Spice Adjustments: Feel free to modify the amount of chili peppers and spices. A pinch of smoked paprika or a squeeze of lime juice can add an interesting twist.
  • Storing Leftovers: Store any extra dip in an airtight container and reheat it slowly on low heat while stirring frequently to keep it smooth.
  • Expert Tip: From my kitchen tests, I discovered that patience is essential. Rushing the melting process may result in a lumpy dip, so take your time for the best results.
