Ingredients
  

  • ¼ cup bacon grease or butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • ½ tsp black pepper
  • Salt to taste

Instructions
 

  • Make the roux: Melt fat in a skillet over medium heat. Whisk in flour and cook for 2–3 minutes until golden.
  • Add milk: Gradually pour in milk, whisking constantly to prevent lumps.
  • Simmer: Cook for 5–7 minutes until thickened. Season with pepper and salt.
  • Serve: Pour over biscuits, fried chicken, or mashed potatoes.
