- ¼ cup bacon grease or butter
- ¼ cup all-purpose flour
- 2 cups whole milk
- ½ tsp black pepper
- Salt to taste
Make the roux: Melt fat in a skillet over medium heat. Whisk in flour and cook for 2–3 minutes until golden.
Add milk: Gradually pour in milk, whisking constantly to prevent lumps.
Simmer: Cook for 5–7 minutes until thickened. Season with pepper and salt.
Serve: Pour over biscuits, fried chicken, or mashed potatoes.
