Ingredients

  • 4 slices stale or toasted rustic bread
  • 2 tsp smoked paprika
  • 2 large eggs
  • 1/4 cup olive oil
  • Salt and pepper to taste

Instructions
 

Sauté the Garlic:

  • Heat the olive oil in a large pot over medium heat. Add the sliced garlic and cook until soft and lightly golden, being careful not to brown too much.

Develop the Broth:

  • Stir in the smoked paprika for a few seconds. Pour in the water or broth and bring the mixture to a gentle simmer. Season with salt, pepper, and red pepper flakes if using.

Incorporate the Bread:

  • Add the toasted bread slices to the simmering liquid. Let them soak and soften for about 10 minutes, allowing the bread to release its flavor into the broth.

Create the Egg Drop:

  • Slowly pour the beaten eggs into the simmering soup while stirring gently. This will form thin strands of cooked egg throughout the broth.

Final Adjustments:

  • Check the seasoning and adjust salt and pepper if needed. Remove the pot from heat once the eggs are just set.

Serve:

  • Ladle the Spanish Garlic Soup into bowls and garnish with chopped parsley if desired. Serve hot.
