Ingredients

  • 12 oz spaghetti
  • 1 lb fresh sturgeon cut into bite-sized pieces
  • 4 oz pancetta diced
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions

  • Cook the Pasta: Boil spaghetti in salted water until al dente. Reserve 1 cup of pasta water, then drain.
  • Prepare the Sturgeon: Season sturgeon with salt and pepper. Heat olive oil in a pan and sear sturgeon until golden. Set aside.
  • Cook the Pancetta: In the same pan, cook pancetta until crispy. Add minced garlic and sauté for 1 minute.
  • Make the Sauce: Whisk eggs and Parmesan in a bowl. Gradually add reserved pasta water to create a creamy mixture.
  • Combine: Toss cooked pasta with the egg mixture, pancetta, and sturgeon. Garnish with parsley and serve immediately.

Notes

  1. Choosing Sturgeon:
    • Fresh sturgeon is ideal, but if unavailable, you can substitute it with halibut, cod, or even salmon.
    • Ensure the fish is sustainably sourced for the best quality and flavor.
  2. Pasta Options:
    • While spaghetti is traditional, you can use linguine, fettuccine, or even gluten-free pasta.
    • Cook the pasta al dente to ensure it holds up well with the sauce.
  3. Pancetta Alternatives:
    • If pancetta is hard to find, guanciale or thick-cut bacon can be used as substitutes.
  4. Sauce Consistency:
    • If the sauce feels too thick, add a splash of reserved pasta water to loosen it.
    • Avoid scrambling the eggs by tossing the pasta quickly and off direct heat.
  5. Storing and Reheating:
    • Store leftovers in an airtight container in the refrigerator for up to 2 days.
    • Reheat gently in a pan with a splash of water or broth to maintain creaminess.
  6. Serving Suggestions:
    • Pair this dish with a crisp white wine like Pinot Grigio or Sauvignon Blanc.
    • Serve with a side salad or roasted vegetables for a complete meal.
  7. Make-Ahead Tip:
    • You can prepare the sturgeon and pancetta in advance. Reheat them gently before combining with the pasta and sauce.
