- 1 lb fresh sturgeon cut into bite-sized pieces
- 4 oz pancetta diced
- 3 large eggs
- 1 cup grated Parmesan cheese

Cook the Pasta: Boil spaghetti in salted water until al dente. Reserve 1 cup of pasta water, then drain.

Combine: Toss cooked pasta with the egg mixture, pancetta, and sturgeon. Garnish with parsley and serve immediately.
