Ingredients
  

  • 1 lb fresh shrimp peeled and deveined
  • 2 limes juiced
  • 2 cloves garlic minced
  • 1 tsp chili powder
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 2 cups shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup corn kernels
  • 1/2 cup fresh salsa
  • Optional: diced avocado chopped cilantro

Instructions
 

  • In a bowl, combine the shrimp, lime juice, garlic, chili powder, salt, and pepper. Let marinate for 15 minutes.
  • Heat olive oil in a skillet over medium-high heat. Add the shrimp and cook for 2-3 minutes on each side until they turn pink and are cooked through.
  • In a serving bowl, layer the shredded lettuce, diced tomatoes, corn, and fresh salsa.
  • Top with the cooked shrimp and add avocado or cilantro if desired.
